  • 500 grams beef chuck or brisket
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 pieces star anise
  • 0.25 cup soy sauce
  • 2 cups water
  • 1 piece beef bouillon cube
  • 1 tablespoon erythritol or low-carb sweetener
  • 0.5 teaspoon black pepper
  • 2 tablespoons green onions, chopped
  • 2 cups cauliflower rice

Directions

Step 1

Cut the beef into bite-sized cubes. Heat olive oil in a large pot over medium-high heat. Add beef cubes and sear until browned on all sides. Work in batches if necessary to avoid overcrowding the pot.

Remove the beef from the pot and set aside. In the same pot, add chopped onion, minced garlic, and sliced ginger. Sauté for 3-4 minutes until fragrant and the onion becomes translucent.
