  • 1 medium zucchini, diced
  • 6 cups beef broth
  • 1 bay leaf
  • 2 cups spinach leaves, chopped
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large mixing bowl, combine the ground beef, almond flour, egg, parmesan cheese, 1 minced garlic clove, onion powder, dried oregano, salt, and black pepper. Mix until well combined.

Shape the meat mixture into approximately 1-inch meatballs and set aside.
