Ingredients

  • 500 grams Beef chuck, cut into cubes
  • 2 tablespoons Coconut oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 400 milliliters Canned coconut milk
  • 250 milliliters Beef broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Cauliflower head
  • 2 tablespoons Cilantro, chopped
  • 1 whole Lime, cut into wedges

Directions

Step 1

Heat 1 tablespoon of coconut oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef and set aside.

Step 2

In the same pot, add the remaining 1 tablespoon of coconut oil. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and ginger to the onions and sauté for another 1-2 minutes until fragrant.

Stir in the curry powder, ground cumin, and ground coriander, cooking for 1 minute to enhance the flavors.

Return the browned beef to the pot. Pour in the coconut milk and beef broth, stirring to combine.
