  • 1000 grams Beef chuck, cut into cubes
  • 3 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 1 large Red bell pepper, sliced
  • 1 large Green bell pepper, sliced
  • 150 grams Tomato paste
  • 500 ml Beef broth
  • 1 teaspoon Ground black pepper
  • 2 pieces Bay leaves
  • 2 tablespoons Fish sauce
  • 50 grams Pickled jalapeños, sliced
  • 0 to taste Salt

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the beef cubes and sear them until nicely browned on all sides. This should take about 8-10 minutes.

Remove the beef and set it aside. In the same pot, add the chopped onion and minced garlic. Sauté them until the onion is translucent, around 5 minutes.

Add the red and green bell peppers, and cook for another 3 minutes until they start to soften.

Stir in the tomato paste and cook for a minute to caramelize slightly, enhancing its sweetness.
