  • 4 pounds beef bones
  • 2 stalks celery stalks
  • 1 medium carrot
  • 1 large onion
  • 4 cloves garlic cloves
  • 2 leaves bay leaves
  • 1 tablespoon whole black peppercorns
  • 2 tablespoons apple cider vinegar
  • 12 cups water
  • 1 teaspoon sea salt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the beef bones on a large baking sheet. Roast in the preheated oven for 30 minutes, turning halfway through, until deeply browned.

Step 3

Meanwhile, roughly chop the celery, carrot, and onion. Crush the garlic cloves with the flat side of a knife.

Step 4

Transfer the roasted bones to a large stockpot. Add the chopped celery, carrot, onion, crushed garlic, bay leaves, and whole black peppercorns.

Pour in the apple cider vinegar and 12 cups of water, ensuring the bones are completely covered.

Bring the mixture to a rapid boil over high heat, then immediately reduce the heat to low and let the broth simmer. You want the broth to be just bubbling gently.
