  • 3 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper

  • 1 medium Onion, diced
  • 5 cloves Garlic cloves, minced
  • 2 peppers Chipotle peppers in adobo sauce
  • 1 cup Beef broth
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground cloves
  • 3 leaves Bay leaves
  • 2 tablespoons Lime juice
  • 0.5 cup Fresh cilantro, chopped

Directions

Step 1

Trim any excess fat from the beef chuck roast and season it generously with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Once the oil is shimmering, add the beef and sear for 3-4 minutes on each side until richly browned.

Transfer the seared beef to a slow cooker.
