  • 1 medium head Cauliflower
  • 200 grams Green beans
  • 100 grams Moong dal (split yellow lentils)
  • 2 tablespoons Ghee or olive oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Ginger garlic paste
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 cups Water
  • 2 tablespoons Cilantro leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Begin by washing and drying the cauliflower. Cut it into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains. Set aside.

Step 2

Wash the moong dal thoroughly under running water until the water runs clear. Soak it in a bowl of water for about 15 minutes.

Step 3

Trim the ends of the green beans and chop them into 1-inch pieces. Set aside.

Step 4

In a large saucepan, heat the ghee or olive oil over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter for about 30 seconds.

Step 5

Stir in the ginger garlic paste and sauté for another minute until the raw smell disappears.

Add the moong dal, turmeric powder, red chili powder, and salt to the saucepan. Stir well to coat the dal with the spices.

Pour in 2 cups of water and bring the mixture to a boil. Partially cover the saucepan, reduce the heat to low, and let it simmer for 15 minutes or until the dal is almost cooked.

Add the chopped green beans to the saucepan and cook for another 5 minutes until they start to tender.

Increase the heat to medium and add the cauliflower rice. Mix everything thoroughly and cook for an additional 5-7 minutes, stirring occasionally until the cauliflower rice is cooked through but not mushy.

Turn off the heat, add the lemon juice, and give it a final stir.
