  • 2 pieces Low-carb tortillas
  • 1 cup Black soybeans (canned, rinsed and drained)
  • 1 cup Cheddar cheese
  • 0.25 cup Chopped onions
  • 0.5 cup Chopped tomato
  • 0.25 cup Sour cream
  • 1 medium Avocado
  • 2 tablespoons Hot sauce
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat olive oil in a skillet over medium heat. Add chopped onions and cook for 3-4 minutes until translucent.

Add rinsed and drained black soybeans to the skillet and season with salt and black pepper. Cook for another 5 minutes, stirring occasionally.
