Ingredients

  • 2 racks pork ribs
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 0.5 teaspoon cayenne pepper
  • 2 tablespoons brown sugar substitute (erythritol or monk fruit sweetener)
  • 1 cup sugar-free ketchup
  • 0.25 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon liquid smoke

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Remove the thin membrane from the back of the ribs if it's not already removed, as this helps make them more tender.

Step 3

Mix together the olive oil, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper in a small bowl to form a rub.

Step 4

Rub this mixture all over both sides of the ribs generously.

Step 5

Place the ribs on a large baking sheet lined with foil, bone side down.

Step 6

Cover the ribs with another layer of foil and bake in the preheated oven for about 2.5 hours or until the ribs are tender.

Step 7

While the ribs are baking, you can prepare the low carb BBQ sauce. In a saucepan over medium heat, combine the brown sugar substitute, sugar-free ketchup, apple cider vinegar, Worcestershire sauce, and liquid smoke.

Step 8

Bring the sauce to a gentle simmer, stirring occasionally, and let it cook for about 15 minutes until slightly thickened. Adjust seasonings as needed.

Step 9

Once the ribs have completed the initial bake, remove them from the oven and discard the top foil.

Step 10

Increase the oven temperature to 400°F (200°C) or preheat your grill to medium-high.

Step 11

Generously brush the ribs with the prepared low carb BBQ sauce.

Step 12

Return the ribs to the oven (uncovered) for an additional 20-30 minutes or grill them, occasionally basting with more sauce, until they are nicely glazed and charred to your liking.

Step 13

Once finished, let the ribs rest for a few minutes before slicing and serving.

Step 14

Serve the ribs hot, with extra BBQ sauce on the side if desired.
