Preheat your oven to 300°F (150°C).
Rinse and pat dry the pork belly with paper towels. Score the skin in a crisscross pattern, making sure not to cut into the meat.
In a small bowl, combine garlic powder, onion powder, salt, black pepper, and paprika. Rub this spice mixture all over the pork belly, making sure to get it into the scored skin.
Heat the olive oil in a large oven-proof skillet over medium-high heat. Once hot, place the pork belly skin-side down into the skillet and sear for about 4-5 minutes, or until the skin becomes golden and crispy.
Flip the pork belly and sear the other side for another 3-4 minutes.
Transfer the skillet to the oven and roast the pork belly for 90 minutes, basting with its own juices every 30 minutes.

Increase the oven temperature to 425°F (220°C) and roast for an additional 15-20 minutes or until the glaze has caramelized and the pork belly is deeply browned.
Remove from the oven and let rest for 10 minutes before slicing.
