Ingredients

  • 4 ears Fresh corn on the cob
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Low-carb BBQ sauce
  • 2 tablespoons Fresh chopped parsley
  • 4 pieces Lime wedges

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Shuck the corn, removing all husks and silk. Rinse under cold water to remove any remaining silk.

Step 3

In a small bowl, mix together olive oil, garlic powder, smoked paprika, salt, and black pepper.

Step 4

Brush each ear of corn with the seasoned olive oil mixture until evenly coated.

Step 5

Place the corn on the preheated grill. Cook for about 15-20 minutes, turning every 5 minutes, until the corn is tender and has a slight char.

Step 6

When the corn is nearly done, use a grill brush to coat each ear with the low-carb BBQ sauce.

Step 7

Grill for an additional 2-3 minutes, turning frequently, until the BBQ sauce has caramelized slightly.

Step 8

Remove the corn from the grill and let rest for a couple of minutes.

Step 9

Sprinkle with fresh chopped parsley for garnish and serve each ear with a lime wedge for squeezing over the top.
