Ingredients

  • 1 medium head Cauliflower
  • 1 large Egg
  • 1 cup Mozzarella cheese, shredded

  • 0.5 teaspoon Garlic powder
  • 0.5 cup BBQ sauce, low-carb
  • 1 cup Cooked chicken breast, shredded
  • 0.5 Red onion, thinly sliced
  • 0.25 cup Cilantro, chopped
  • 1 cup Cheddar cheese, shredded
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 450°F (232°C). Line a pizza pan or a baking sheet with parchment paper and lightly oil it with olive oil.

Break the cauliflower into florets, place them into a food processor, and pulse until you achieve a rice-like consistency.

Step 3

Place the cauliflower rice in a microwave-safe bowl and microwave for 8 minutes, or until softened. Let cool slightly.
