Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • 1 cup Low-carb ketchup
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Ground mustard
  • 0.5 teaspoon Liquid smoke
  • 2 tablespoons Granulated erythritol

Directions

Step 1

In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, paprika, and onion powder to create a simple marinade for the chicken.

Step 2

Place the chicken breasts in a shallow dish and coat them evenly with the marinade. Cover and let marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.

Step 3

While the chicken is marinating, prepare the low-carb barbecue sauce by combining the low-carb ketchup, apple cider vinegar, Worcestershire sauce, ground mustard, liquid smoke, and granulated erythritol in a medium saucepan.

Step 4

Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally. Once simmering, reduce the heat to low and let it cook for 10 minutes until thickened. Remove from heat and set aside.

Step 5

Preheat your grill to medium-high heat. If using the oven, preheat to 375°F (190°C) and line a baking sheet with parchment paper.

Step 6

Remove the chicken from the marinade and place it on the preheated grill or prepared baking sheet.

Step 7

Cook the chicken on the grill for about 6-7 minutes per side, or bake in the oven for 25-30 minutes, until the internal temperature reaches 165°F (75°C).

Step 8

During the last 5 minutes of cooking, generously brush each chicken breast with the prepared low-carb barbecue sauce.

Step 9

Once cooked through, remove the chicken from the heat and let it rest for a few minutes before serving.

Step 10

Serve the barbecue chicken with your choice of low-carb side dishes and extra barbecue sauce for dipping.
