  • 0.5 cup Cocoa powder
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter
  • 1 cup Erythritol or other low-carb sweetener
  • 4 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 Ripe banana, mashed
  • 0.5 cup Unsweetened almond milk
  • 0.5 cup Dark chocolate chips (sugar-free)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9-inch round cake pan with parchment paper.

Step 2

In a medium-sized bowl, combine almond flour, cocoa powder, baking powder, and salt. Stir to mix evenly and set aside.

Step 3

In a large bowl, beat the butter and erythritol together until the mixture is light and fluffy.

Step 4

Add the eggs one at a time to the butter mixture, mixing well after each addition. Mix in the vanilla extract and mashed banana until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6

Fold in the dark chocolate chips gently into the batter.

Step 7

Pour the batter into the prepared cake pan, spreading it evenly with a spatula.

Step 8

Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.

Step 10

Once cooled, slice the cake and serve. Enjoy your low carb banana chocolate cake!
