Ingredients

  • 200 grams Fresh corn kernels
  • 60 grams Almond flour
  • 2 large Eggs
  • 50 milliliters Coconut milk
  • 2 stalks Green onions, chopped
  • 1 medium Red chili, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Baking powder
  • 3 tablespoons Coconut oil

Directions

Step 1

Begin by trimming the kernels off of fresh corn cobs or use frozen corn that has been thawed. Measure out 200 grams of corn kernels.

Step 2

In a large mixing bowl, combine the corn kernels, almond flour, and baking powder. Stir to mix evenly.

Step 3

Crack the eggs into the bowl and pour in the coconut milk. Mix everything until a batter forms.

Step 4

Add the chopped green onions, red chili, and minced garlic to the batter. Season with salt and black pepper.

Step 5

In a skillet, heat 1 tablespoon of coconut oil over medium heat.

Step 6

For each fritter, scoop about 2 tablespoons of batter into the hot skillet, shaping it into small patties. You can fry a few fritters at a time, depending on the size of your skillet.

Step 7

Cook the fritters for 3-4 minutes on each side, or until they are golden brown and cooked through.

Step 8

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Repeat with the remaining batter, adding more coconut oil as needed.

Step 9

Serve warm as a snack or appetizer. Enjoy your low-carb Bakwan Jagung with a side of chili sauce or your favorite low-carb dip.
