Ingredients

  • 1 medium zucchini
  • 1 medium carrot
  • 100 grams green cabbage
  • 2 stalks green onion
  • 100 grams almond flour
  • 2 large egg
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 150 milliliters coconut oil or olive oil

Directions

Step 1

Grate the zucchini and carrot into a large mixing bowl.

Step 2

Finely slice the cabbage and green onions, and add them to the bowl with the grated vegetables.

Step 3

In a separate bowl, whisk the eggs and almond flour together until well combined.

Step 4

Add the garlic powder, salt, and black pepper to the almond flour mixture, and stir to evenly distribute the seasoning.

Step 5

Pour the almond flour mixture over the mixed vegetables, and thoroughly combine until the vegetables are evenly coated.

Step 6

Heat the coconut or olive oil in a large frying pan over medium heat.

Step 7

Once the oil is hot, carefully drop spoonfuls of the vegetable and almond flour mixture into the pan, flattening slightly to form patties. Ensure they are not overcrowded in the pan.

Step 8

Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.

Step 9

Once cooked, remove the fritters from the pan and drain them on a plate lined with paper towels to remove excess oil.

Step 10

Serve the bakwan warm as a snack or side dish, optionally accompanied by your choice of dipping sauce.
