Ingredients

  • 3 medium Zucchini
  • 4 cups Cauliflower florets
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 medium Onion
  • 3 pieces Garlic cloves
  • 2 cups Marinara sauce
  • 1 cup Ricotta cheese
  • 1 large Egg
  • 1 cup Parmesan cheese
  • 2 cups Mozzarella cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the zucchinis into 1/4-inch thick rounds.

Step 3

Steam the cauliflower florets until tender, about 5-7 minutes.

Step 4

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent.

Step 5

Add ground beef to the skillet, cooking until no longer pink. Drain excess fat if necessary.

Step 6

Stir in marinara sauce, salt, pepper, and Italian seasoning. Let simmer for 5 minutes.

Cover the dish with foil and bake in the preheated oven for 25 minutes.

Remove foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Allow to cool for 5 minutes before serving.
