Ingredients

  • 1 cauliflower head
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 4 bacon slices
  • 2 green onions, sliced
  • 0.5 cup sour cream

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the cauliflower head and cut it into small florets to resemble the size of small potato chunks.

Step 3

In a large bowl, toss the cauliflower florets with olive oil, salt, black pepper, and garlic powder until well coated.

Step 4

Spread the cauliflower on a baking sheet lined with parchment paper in an even layer.

Step 5

Bake in the preheated oven for 25-30 minutes or until the cauliflower is tender and edges are golden brown, stirring once halfway through.

Step 6

While the cauliflower is baking, cook the bacon slices in a frying pan over medium heat until crispy. Remove from the pan and drain on paper towels, then crumble them into small pieces.

Step 7

Once the cauliflower is done, remove from oven and place in a large mixing bowl.

Step 8

Add the shredded cheddar cheese and crumbled bacon to the cauliflower and gently toss until the cheese begins to melt and evenly coats the cauliflower.

Step 9

Transfer the cheesy cauliflower mixture to a serving dish.

Step 10

Garnish with sliced green onions and serve with a dollop of sour cream on top for added creaminess.

Step 11

Enjoy your low carb baked potato alternative with cheese and bacon!
