Ingredients

  • 400 g Shirataki noodles
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 200 g Spinach, fresh
  • 4 large Eggs
  • 100 ml Heavy cream
  • 50 g Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 g Mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Drain and rinse the shirataki noodles thoroughly under cold water for at least 2 minutes, then pat them dry with a paper towel to remove excess moisture.

Step 3

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Step 4

Add the fresh spinach to the skillet and cook down until wilted, approximately 3-4 minutes. Remove from heat.

Step 5

In a mixing bowl, whisk together eggs, heavy cream, grated Parmesan cheese, salt, and pepper until well combined.

Step 6

Add the drained shirataki noodles and wilted spinach to the egg mixture, stirring to coat evenly.

Step 7

Transfer the mixture to a greased baking dish (approximately 8x8 inches in size).

Step 8

Top with shredded mozzarella cheese, spreading it evenly across the surface.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the cheese is golden and bubbly and the egg mixture has set.

Step 10

Remove from the oven and let it cool slightly before cutting into portions. Serve warm.
