Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 1 large Egg
  • 1.5 cups Mozzarella cheese
  • 2 tablespoons Cream cheese
  • 4 slices Smoked salmon (lox)
  • 4 tablespoons Cream cheese
  • 2 tablespoons Capers
  • 0.25 thinly sliced Red onion
  • 0.5 sliced Lemon
  • 2 sprigs Fresh dill

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large microwave-safe bowl, combine the mozzarella cheese and 2 tablespoons of cream cheese. Microwave in 30-second intervals, stirring between each, until the cheeses are melted and smooth.

Step 3

In another bowl, whisk together the almond flour, coconut flour, baking powder, xanthan gum, and salt.

Step 4

Add the egg to the melted cheese and mix until combined. Then add the dry ingredients to the cheese mixture and mix until it forms a dough. It will be sticky.

Step 5

Divide the dough into two equal parts. Roll each part into a log and shape it into a bagel by pressing the ends together.

Step 6

Place the shaped bagels on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

Step 7

Let the bagels cool for a few minutes, then slice them in half horizontally.

Step 8

Spread 2 tablespoons of cream cheese on each bagel half.

Step 9

Top each with a slice of smoked salmon, a few capers, slices of red onion, a squeeze of lemon juice, and a sprinkle of fresh dill.

Step 10

Serve immediately and enjoy your low carb bagel with lox and cream cheese!
