Ingredients

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 2 cups mozzarella cheese, shredded
  • 2 ounces cream cheese
  • 2 large eggs
  • 4 ounces cream cheese, for topping
  • 8 ounces smoked salmon
  • 2 tablespoons capers
  • 0.5 red onion, thinly sliced
  • 1 tablespoon fresh dill, for garnish

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized bowl, mix the almond flour, baking powder, and salt together.

Step 3

In a microwave-safe bowl, combine the shredded mozzarella cheese and 2 ounces of cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are completely melted and combined.

Step 4

Add the melted cheese mixture to the almond flour mixture, along with the two eggs. Mix thoroughly to form a dough. If it is too sticky to handle, refrigerate for 10-15 minutes.

Step 5

Divide the dough into 4 equal parts. Roll each part into a log, and then form into a circle to create the bagel shape, pinching the ends together.

Step 6

Place the bagels onto the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown.

Step 7

Allow the bagels to cool slightly before slicing each one in half horizontally.

Step 8

Spread approximately 1 ounce of cream cheese on the cut side of each bagel half.

Step 9

Layer with smoked salmon, a few capers, and slices of red onion.

Step 10

Garnish with fresh dill and serve immediately.
