Ingredients

  • 20 pieces Almonds
  • 2 cups Unsweetened Almond Milk
  • 10 strands Saffron Strands
  • 0.5 teaspoons Cardamom Powder
  • 2 tablespoons Low Carb Sweetener (Erythritol or Stevia)
  • 0.5 teaspoons Rose Water
  • 0.5 cups Water

Directions

Step 1

Soak the almonds in half a cup of water overnight or for at least 6 hours until softened.

Step 2

Drain the soaked almonds and peel off their skins. The skins should come off easily after soaking.

Step 3

Blend the peeled almonds with a quarter cup of almond milk to make a smooth paste. Add more almond milk if the mixture is too thick to blend.

Step 4

In a medium-sized saucepan, add the remaining almond milk and almond paste. Stir well to combine.

Step 5

Add saffron strands to the mixture and heat it over medium heat. Allow it to come to a gentle boil while stirring occasionally.

Step 6

Mix in the cardamom powder and low carb sweetener to the saucepan and continue to heat for another 2 minutes, ensuring everything is well incorporated.

Step 7

Once heated through, remove the saucepan from the heat and stir in the rose water for an added aromatic touch.

Step 8

Pour the badam milk into serving glasses. You may strain it through a fine mesh sieve if you prefer a smoother texture.

Step 9

Serve warm or chilled, garnished with extra saffron strands or a few chopped almonds if desired.
