Ingredients

  • 4 slices bacon
  • 4 pieces large eggs
  • 2 tablespoons heavy cream
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups cheddar cheese
  • 1 tablespoon butter
  • 2 tablespoons fresh chives
  • 0.5 cup salsa

Directions

Step 1

Preheat a large non-stick skillet over medium heat.

Step 2

Place bacon slices in the skillet and cook until crispy, flipping as needed, about 5-7 minutes. Remove and drain excess fat on paper towels.

Step 3

In a medium bowl, whisk together eggs, heavy cream, salt, and black pepper until thoroughly combined.

In the same skillet, wipe out excess bacon fat leaving a small coating on the surface, and melt butter over medium-low heat.

Pour in the egg mixture, and cook, stirring constantly with a spatula, until the eggs are just set but still soft, about 3-4 minutes. Remove from heat.
