Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Butter
  • 1 large Egg
  • 0.5 teaspoons Salt
  • 8 slices Bacon
  • 1 medium Onion, finely chopped
  • 5 large Eggs
  • 1 cups Heavy cream
  • 1.5 cups Shredded cheese (such as Gruyère or cheddar)
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Nutmeg
  • 2 tablespoons Chopped chives (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

To make the crust, mix almond flour and salt in a bowl.

Step 3

Melt the butter and combine it with the almond flour mixture, then add 1 beaten egg. Mix until a dough forms.

Step 4

Press the dough evenly into a 9-inch tart pan, covering the bottom and the sides well.

Step 5

Bake the crust in the preheated oven for about 10 minutes until slightly golden. Remove and let cool.

Step 6

In a large skillet, cook the bacon over medium-high heat until crispy. Remove and drain on paper towels, then crumble once cool.

Step 7

In the same skillet, remove excess bacon fat leaving about 1 tablespoon, and sauté the onions over medium heat until translucent and slightly caramelized. Set aside to cool.

Step 8

In a large bowl, whisk together the remaining 5 eggs, heavy cream, black pepper, and nutmeg until well combined.

Step 9

Sprinkle the crumbled bacon, sautéed onions, and half of the shredded cheese over the baked crust.

Step 10

Pour the egg and cream mixture over the bacon and onion layers in the crust.

Step 11

Top with the remaining cheese and bake in the preheated oven for about 30-35 minutes, or until the quiche is set and the top is golden.

Step 12

Remove from the oven and let cool for 10 minutes before slicing.

Step 13

Garnish with chopped chives if desired and serve warm.
