  • 1 unit low carb tortilla
  • 0.25 cup shredded cheddar cheese
  • 0.5 cup fresh spinach leaves
  • 4 units cherry tomatoes

Directions

Step 1

Preheat a skillet over medium heat. Once hot, add bacon strips and cook until crispy, about 5-7 minutes, flipping halfway through. Remove from the pan and place on a paper towel-lined plate to drain excess fat.

Step 2

In a small bowl, whisk together the eggs, heavy cream, salt, and black pepper until fully blended.

Step 3

Wipe the skillet clean and return it to low heat. Add butter to the skillet, allowing it to melt and coat the surface.
