Begin by washing the green bell peppers and habanero peppers. Remove the seeds and stems from the green bell peppers. Peel and roughly chop the onions.
In a blender, combine the green bell peppers, habanero peppers, and half of the chopped onions. Blend until smooth. You may need to add a small amount of water to facilitate blending.
In a large pot, heat the palm oil over medium heat until it becomes translucent. This process is called bleaching and should be completed with caution and proper ventilation.
Add the remaining chopped onions to the bleach oil and sauté until they become soft and translucent.
Add the blended pepper mixture to the pot, stirring well. Increase the heat to medium-high and let the mixture cook for about 15 minutes, stirring occasionally until the water content reduced significantly.
Add the beef stew meat into the pot, stirring to combine. Pour in the water, then cover and let it cook for another 20 minutes until the beef becomes tender.
Sprinkle in the dried ground crayfish, seasoning cubes, ground white pepper, and salt. Stir thoroughly to ensure that the spices are well-incorporated.
Reduce the heat to low, cover, and allow the stew to simmer for an additional 15 minutes.
Wash and roughly chop the spinach, then add it to the pot. Stir and let simmer for an additional 5 minutes.
Taste and adjust salt to preference. Serve hot with cauliflower rice or a low-carb side of choice.
