Ingredients

  • 1 whole Ripe avocado
  • 1 large Egg yolk
  • 1 tablespoon Lemon juice
  • 1 teaspoon White wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground pepper

Directions

Step 1

Cut the ripe avocado in half, remove the pit, and scoop the flesh into a food processor or blender.

Step 2

Add the egg yolk, lemon juice, white wine vinegar, and Dijon mustard to the food processor.

Step 3

Blend the mixture on low speed until smooth and creamy. This should take about 1 minute.

Step 4

While the blender is running on low speed, slowly drizzle in the olive oil. Make sure to add it very gradually so it emulsifies properly and thickens the mixture.

Step 5

Continue blending until all the olive oil is incorporated and the mixture is thick and creamy. This should take about 2-3 minutes.

Step 6

Add salt and ground pepper to the mayonnaise, then blend again briefly to mix in the seasonings.

Step 7

Taste the mayonnaise and adjust the seasoning if necessary by adding more salt or lemon juice as desired.

Step 8

Transfer the avocado mayonnaise to a clean jar or airtight container and refrigerate for at least 30 minutes before using to let the flavors meld together.

Step 9

Store in the refrigerator and use within 4-5 days for the best freshness and flavor.
