Ingredients

  • 2 cups almond flour
  • 0.25 cups coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 0.5 teaspoon Himalayan pink salt
  • 3 cups shredded mozzarella cheese
  • 4 tablespoons cream cheese
  • 2 large eggs
  • 2 tablespoons baking soda
  • 4 cups water
  • 1 tablespoon coarse sea salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, combine almond flour, coconut flour, baking powder, xanthan gum, and Himalayan pink salt. Mix thoroughly.

Step 3

In a microwave-safe bowl, add the shredded mozzarella cheese and cream cheese. Microwave for 1 minute, stir, then microwave for additional 30-second intervals until melted and combined.

Add the melted cheese mixture to the dry ingredients. Add the eggs. Using a spatula, fold together until a dough forms. Knead with your hands if necessary to thoroughly mix the ingredients.
