Ingredients

  • 1 cup Almond flour
  • 0.5 cup Flaxseed meal
  • 0.5 cup Unsweetened shredded coconut
  • 0.25 cup Sunflower seeds
  • 0.25 cup Pumpkin seeds
  • 0.25 cup Chopped walnuts
  • 2 tablespoons Chia seeds
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 cup Erythritol sweetener
  • 0.25 cup Coconut oil, melted
  • 1 Egg
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper cups or lightly grease the cups with oil.

Step 2

In a large mixing bowl, combine the almond flour, flaxseed meal, shredded coconut, sunflower seeds, pumpkin seeds, chopped walnuts, chia seeds, baking powder, salt, and erythritol. Mix well to combine the dry ingredients.

In a separate dish, whisk together the melted coconut oil, egg, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until everything is thoroughly integrated.
