Ingredients

  • 2 cups Almond flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cup Erythritol (or preferred low-carb sweetener)
  • 3 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.25 cup Butter, melted
  • 0.75 cup Fresh blueberries

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.

Step 2

In a large mixing bowl, whisk together the almond flour, baking powder, salt, and erythritol until well combined.

Step 3

In a separate bowl, beat the eggs lightly, then whisk in the almond milk, vanilla extract, and melted butter.

Step 4

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix the batter.

Step 5

Gently fold in the blueberries, ensuring an even distribution throughout the batter.

Step 6

Spoon the batter evenly into the prepared muffin cups, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18–20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
