Ingredients

  • 200 grams asparagus
  • 6 large eggs
  • 60 milliliters heavy cream
  • 50 grams grated Parmesan cheese
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cloves garlic
  • 50 grams diced onion
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the asparagus and trim the woody ends. Cut into 1-inch pieces.

Step 3

Peel and mince the garlic. Dice the onion finely.

Step 4

In a medium oven-safe skillet, heat the olive oil over medium heat.

Step 5

Add the onion and garlic to the skillet and sauté for 2–3 minutes until fragrant and softened.

Step 6

Add the asparagus to the skillet and cook for 3–4 minutes until it begins to soften. Season with a pinch of salt and pepper.

Step 7

While the vegetables are cooking, whisk the eggs, heavy cream, Parmesan cheese, salt, and black pepper in a mixing bowl until well combined.

Step 8

Pour the egg mixture evenly over the vegetables in the skillet. Gently stir to distribute the asparagus and onion evenly throughout the pan.

Step 9

Cook on the stovetop over medium-low heat for 2–3 minutes until the edges begin to set.

Step 10

Transfer the skillet to the preheated oven and bake for 10–12 minutes, or until the frittata is fully set in the middle and lightly golden on top.

Step 11

Carefully remove the skillet from the oven and let it cool for 5 minutes before slicing.

Step 12

Garnish with freshly chopped parsley, if desired, and serve warm.
