Ingredients

  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cups fresh spinach, roughly chopped
  • 4 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear each side until they are golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and place them in a baking dish.

Step 3

In the same skillet, reduce the heat to medium and add the minced garlic, sautéing until fragrant, about 1 minute.

Step 4

Add the chopped artichoke hearts and spinach to the skillet, cooking until the spinach is wilted, about 3 minutes.

Step 5

In a medium bowl, mix together the softened cream cheese, sour cream, and 3/4 cup of the grated Parmesan cheese until well combined. Stir in the cooked artichoke and spinach mixture, along with the salt, black pepper, and paprika.

Step 6

Spread the artichoke and spinach mixture evenly over the seared chicken breasts in the baking dish.

Step 7

Sprinkle the remaining 1/4 cup of Parmesan cheese over the top of the artichoke mixture.

Step 8

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the topping is bubbly and golden brown.

Step 9

Remove the dish from the oven and let it rest for 5 minutes before serving.

Step 10

Serve the Low Carb Artichoke Chicken warm and enjoy your delicious, healthy meal!
