Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Bell pepper
  • 3 tablespoons Soy sauce
  • 2 large Eggs
  • 1 cup Frozen mixed vegetables
  • 2 stalks Green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Chop the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains. This is your 'cauliflower rice'.

Step 2

Finely chop the onion, mince the garlic, and dice the bell pepper into small pieces. Slice the green onions and set them aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat.

Add the chopped onion and garlic to the skillet and sauté for 2-3 minutes until the onion becomes translucent.
