Ingredients

  • 1 medium head cauliflower
  • 2 tablespoons olive oil
  • 1 small onion
  • 2 cloves garlic cloves
  • 3 tablespoons tomato paste
  • 1 cup diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 bay leaf
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley
  • 1 teaspoon lemon juice

Directions

Step 1

Remove the leaves and core from the cauliflower. Cut it into chunks and process in a food processor until it resembles rice.

Step 2

Finely chop the onion and garlic cloves.

Step 3

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3 minutes.

Step 4

Stir in the tomato paste and cook for another 2 minutes, allowing the paste to meld with the onion and garlic.

Step 5

Add the diced tomatoes and broth to the skillet. Stir well to combine.

Step 6

Add the bay leaf, sea salt, and black pepper. Bring the mixture to a simmer.

Step 7

Once simmering, add the cauliflower rice and stir it into the tomato mixture. Cover the skillet and cook on low heat for about 10 minutes or until the cauliflower is tender.

Step 8

Remove the bay leaf and adjust seasoning with more salt and pepper if needed.

Step 9

Remove the skillet from heat and stir in the parsley and lemon juice.

Step 10

Serve hot as a side or a light main dish. Enjoy your flavorful, low carb Arroz de Tomate!
