  • 2 cups Fresh corn kernels
  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 2 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 1 cup Grated mozzarella cheese
  • 2 tablespoons Granulated sugar substitute
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Butter

Directions

Step 1

In a blender, add the fresh corn kernels, almond flour, coconut flour, eggs, almond milk, and sugar substitute. Blend until the mixture is smooth and well combined.

Step 2

Transfer the blended mixture to a large bowl, and add the grated mozzarella cheese, baking powder, and salt. Stir until evenly mixed.

Step 3

Preheat a large non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface evenly.

Scoop about 1/4 cup of the batter onto the skillet for each arepa, spreading lightly with the back of the spoon to form a round shape about 4 inches in diameter.
