  • 200 grams Boneless chicken breast

  • 1 piece Red chili pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoons Coconut oil
  • 2 pieces Kaffir lime leaves
  • 1 stick Lemongrass
  • 1 teaspoon Turmeric powder
  • 6 sheets Banana leaves

Directions

Step 1

Begin by preparing the filling. Thinly slice the shallots and garlic. Mince the red chili pepper and set aside.

Cut the boneless chicken breast into small cubes.

Step 3

Heat 1 tablespoon of coconut oil in a skillet over medium heat. Add the shallots, garlic, and red chili pepper, sautéing until fragrant.

Add the chicken cubes to the skillet and cook until lightly browned.

Pour in the coconut milk, stirring to combine. Add the salt, pepper, turmeric powder, kaffir lime leaves, and bruised lemongrass stick. Let this mixture simmer until the chicken is fully cooked and the flavors meld together, about 10 minutes.
