  • 200 grams Almond flour
  • 50 grams Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 100 grams Butter (cold, cubed)
  • 2 large Eggs
  • 3 tablespoons Greek yogurt
  • 50 milliliters Almond milk
  • 1 teaspoon Apricot extract
  • 100 grams Cream cheese
  • 4 tablespoons Sugar-free apricot jam
  • 1 Egg yolk
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients and use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together eggs, Greek yogurt, almond milk, and apricot extract until smooth.
