Ingredients

  • 0.5 cup Unsalted butter
  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.5 cup Erythritol sweetener
  • 1 teaspoon Baking powder
  • 2 teaspoons Cinnamon
  • 0.5 teaspoon Salt
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1.5 cups Chopped apples (peeled and cored)
  • 1 tablespoon Lemon juice
  • 0.5 cup Pecans (chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

In a large bowl, beat together the melted butter and erythritol until smooth. Add the egg and vanilla extract, mixing until well incorporated.

Step 3

In another bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, and salt.

Step 4

Add the dry ingredients to the wet ingredients, stirring until a dough forms.

Step 5

Reserve about 1/3 cup of the dough for the crumble topping, and press the remaining dough evenly into the bottom of the prepared pan.

Step 6

In a small bowl, toss the chopped apples with lemon juice and 1 teaspoon of cinnamon.

Spread the apple mixture evenly over the crust in the pan.

To the reserved dough, add the chopped pecans and toss to combine. Crumble this mixture over the top of the apple layer.
