Ingredients

  • 500 grams Cauliflower florets
  • 1 medium, finely chopped Onion
  • 2 medium, finely chopped Tomato
  • 1 inch, grated Ginger
  • 3 cloves, minced Garlic
  • 1 finely chopped Green chili
  • 2 tablespoons Ghee or olive oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon, or to taste Salt
  • 0.5 teaspoon Amchur (dry mango powder)
  • 2 tablespoons, finely chopped Fresh coriander leaves
  • 1 cup Water

Directions

Step 1

Wash and cut cauliflower into small bite-sized florets.

Step 2

In a large pan, heat ghee or olive oil over medium heat.

Step 3

Add cumin seeds and let them sizzle until they turn aromatic.

Step 4

Add the finely chopped onions and sauté until golden brown.

Step 5

Stir in the minced garlic, grated ginger, and chopped green chili, and cook for another minute.

Step 6

Add the chopped tomatoes and cook until they become soft and the oil starts to separate.

Step 7

Stir in coriander powder, cumin powder, garam masala, red chili powder, turmeric powder, and salt. Mix well.

Add cauliflower florets to the pan and stir to coat the florets with the spice mix.
