Ingredients

  • 2 cups Heavy cream
  • 1 cup Unsweetened almond milk
  • 0.75 cup Erythritol sweetener
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoon Salt
  • 5 Egg yolks
  • 0.5 cup Amarena cherries in syrup
  • 0.25 teaspoon Xanthan gum

Directions

Step 1

In a medium saucepan, combine the heavy cream, unsweetened almond milk, half of the erythritol sweetener, and salt. Stir over medium heat until warm, but not boiling.

Step 2

In a separate bowl, whisk together the egg yolks and the remaining erythritol until smooth and pale in color.

Step 3

Slowly drizzle a small amount of the warm cream mixture into the egg yolks while whisking continuously to temper the eggs. Continue adding the warm mixture until about half is incorporated.

Step 4

Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture. Continue to cook over medium-low heat, stirring constantly, until it thickens slightly and coats the back of a spoon.

Step 5

Remove the saucepan from heat and stir in the vanilla extract and xanthan gum. Allow to cool to room temperature.

Step 6

Once cooled, transfer the custard mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

While the ice cream is churning, chop the amarena cherries into small pieces. Gently fold the cherries and a swirl of their syrup into the prepared ice cream.
