Ingredients

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1 medium, chopped onion
  • 2 minced garlic cloves
  • 1 large, diced carrot
  • 2 chopped celery stalks
  • 6 cups chicken broth
  • 1 14.5-ounce can diced tomatoes
  • 1 cup, cut into 1-inch pieces green beans
  • 1 cup Alphabet vegetable noodles
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried basil
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Using a spiralizer or julienne peeler, make zucchini noodles to substitute traditional pasta.

Step 2

In a large pot, heat olive oil over medium heat.

Step 3

Add chopped onions and sauté for about 5 minutes until they become translucent.

Step 4

Add minced garlic and sauté for another minute until fragrant.

Add diced carrot and chopped celery, cooking for 5 minutes until they start to soften.

Pour in chicken broth and add the diced tomatoes (undrained). Stir well to combine.
