Ingredients

  • 500 grams Cauliflower florets
  • 300 grams Turnips, peeled and diced
  • 1 medium Onion, finely chopped
  • 2 medium Tomatoes, chopped
  • 1 tablespoon Ginger, minced
  • 2 whole Garlic cloves, minced
  • 1 whole Green chili, sliced
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil

Directions

Step 1

Heat olive oil in a large pan over medium heat. Add cumin seeds and let them sizzle for about 30 seconds until fragrant.

Step 2

Add finely chopped onion, and sauté until they become translucent, about 3-4 minutes.

Step 3

Stir in minced ginger, garlic, and sliced green chili. Cook for another 2 minutes until the raw aroma disappears.

Step 4

Add chopped tomatoes to the pan and cook until they soften and start to break down, approximately 4-5 minutes.

Step 5

Mix in turmeric powder, coriander powder, red chili powder, and salt. Stir well to coat the ingredients with spices.

Add the cauliflower florets and diced turnips to the pan. Stir to combine with the spice mixture.

Cover the pan and let the vegetables cook on low-medium heat for 15 minutes, stirring occasionally to prevent sticking.
