Ingredients

  • 150 grams Almond flour
  • 50 grams Erythritol (or your preferred low-carb sweetener)
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 60 grams Butter
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 30 grams Almond slices

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix together the almond flour, erythritol, baking powder, and salt.

Step 4

In a separate bowl, whisk together the egg and vanilla extract.

Step 5

Pour the wet mixture into the almond flour mixture and stir until the dough is just combined.

Step 6

Divide the dough into 8 equal pieces and shape each piece into a small rectangular shape, placing them on the prepared baking sheet.

Step 7

Press a few almond slices into the top of each pastry piece for decoration.

Step 8

Bake in the preheated oven for 12-15 minutes or until the pastries are golden brown and set.

Step 9

Let the pastries cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy your delicious low carb almond pastries as a treat!
