Ingredients

  • 1.5 cups Almond flour
  • 1 tablespoon Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 large Egg
  • 3 tablespoons Warm water
  • 1 teaspoon Olive oil

Directions

Step 1

In a medium-sized bowl, combine almond flour, psyllium husk powder, baking powder, and salt. Mix well to ensure there are no clumps.

Step 2

In a separate small bowl, whisk together the egg, warm water, and olive oil until fully combined.

Step 3

Pour the wet ingredients into the dry ingredients and mix with a spatula or your hands until a dough forms. The dough should be soft but not sticky.

Step 4

Divide the dough into 4 equal parts. Roll each part into a ball and then flatten using your hand.

Step 5

Place each flattened ball between two sheets of parchment paper and roll it out into a circle using a rolling pin. The tortillas should be about 6 inches in diameter.

Step 6

Heat a non-stick skillet or a griddle over medium heat. Carefully peel off the top parchment paper, then gently transfer the tortilla to the hot skillet.

Step 7

Cook for about 1-2 minutes on each side or until they begin to turn slightly golden and are cooked through. Be careful not to overcook as they can become dry.

Step 8

Transfer cooked tortillas to a plate and cover with a kitchen towel to keep them warm and soft.

Step 9

Repeat the process with the remaining dough.

Step 10

Serve warm with your choice of fillings or store in an airtight container for up to three days.
