Ingredients

  • 2 medium Sweet potatoes
  • 1 cup Blanched almond flour
  • 0.5 cup Ground almonds
  • 2 large Eggs
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons, finely chopped Green onions
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel and chop the sweet potatoes into small cubes. Place them in a pot of boiling water and cook until tender, about 10-12 minutes. Drain well.

Step 3

In a large bowl, mash the sweet potatoes until smooth. Add the finely chopped green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
