Ingredients

  • 1 cup Unsweetened almond butter
  • 0.25 cup Unsweetened cocoa powder
  • 0.5 cup Almond flour
  • 0.5 cup Chocolate protein powder
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Stevia or low-carb sweetener
  • 2 tablespoons Chia seeds
  • 2 tablespoons Unsweetened almond milk
  • 0.25 cup Slivered almonds

Directions

Step 1

In a large mixing bowl, combine the unsweetened almond butter and coconut oil. If the almond butter is tough to mix, slightly warm it in the microwave for a few seconds to soften.

Step 2

Add the unsweetened cocoa powder, almond flour, chocolate protein powder, and stevia or preferred low-carb sweetener to the mixture.

Step 3

Stir in the vanilla extract, chia seeds, and unsweetened almond milk until well combined. The mixture should be thick and moldable.

Step 4

Gently fold in the slivered almonds, making sure they are evenly distributed throughout the mixture.

Step 5

Line a baking sheet with parchment paper.

Step 6

Use a tablespoon or small cookie scoop to portion the mixture into individual bites, placing each scoop onto the parchment-lined baking sheet.

Step 7

Refrigerate the protein bites for at least 30 minutes to firm up, or until they are set.

Step 8

Once solidified, store the protein bites in an airtight container in the refrigerator for up to one week or in the freezer for extended storage.
