Ingredients

  • 1 cup Almond flour
  • 0.25 cup Cocoa powder (unsweetened)
  • 0.25 cup Coconut oil
  • 0.5 cup Almond milk (unsweetened)
  • 0.5 cup Granulated erythritol
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 0.25 teaspoon Salt
  • 0.25 cup Chopped almonds

Directions

Step 1

In a large mixing bowl, combine the almond flour and cocoa powder. Whisk together until well blended and set aside.

Step 2

In a small saucepan over low heat, melt the coconut oil. Make sure it does not reach boiling temperature.

Step 3

Remove the saucepan from the heat and stir in the almond milk, granulated erythritol, vanilla extract, almond extract, and salt. Stir until the erythritol is completely dissolved.

Step 4

Slowly pour the liquid mixture into the dry ingredients, stirring constantly until a smooth and thick batter forms.

Step 5

Gently fold in the chopped almonds, ensuring they are evenly distributed throughout the mixture.

Step 6

Line a 8x8 inch dish with parchment paper, leaving excess paper hanging over the sides for easy removal.

Step 7

Pour the mixture into the prepared dish. Use a spatula to spread it evenly across the bottom.

Step 8

Refrigerate for at least 2 hours or until the dessert is firm and set.

Step 9

Once set, lift the dessert from the dish using the parchment paper and cut it into squares.

Step 10

Serve immediately or store in an airtight container in the refrigerator for up to a week.
