  • 2 pounds Pork shoulder
  • 1 cup, chopped Pineapple
  • 1 large White onion
  • 3 Garlic cloves
  • 2 tablespoons Chipotle peppers in adobo sauce
  • 1 cup Apple cider vinegar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 16 large Romaine lettuce leaves
  • 0.5 cup, chopped Fresh cilantro
  • 2 Lime wedges

Directions

Step 1

Trim the pork shoulder of excess fat and cut it into 1/2 inch thick slices.

Step 2

In a blender, combine chopped pineapple, half of the chopped onion, garlic cloves, chipotle peppers, apple cider vinegar, oregano, cumin, paprika, salt, and black pepper. Blend until smooth to create the marinade.

Step 3

In a large bowl, combine the pork slices and marinade. Ensure the pork is well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat a grill or a large skillet over medium-high heat. Add olive oil.
