  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 medium Red bell pepper, chopped
  • 2 tablespoons Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Smoked paprika
  • 3 cups Chicken broth
  • 0.5 cup Natural peanut butter, unsweetened
  • 2 medium Zucchini, chunks
  • 2 cups Chopped kale
  • 2 tablespoons Lime juice
  • 0.25 cup Chopped cilantro

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Heat the coconut oil in a large pot over medium-high heat. Add the chicken thighs and brown them on both sides for about 5-7 minutes, then remove them from the pot and set aside.
