Ingredients

  • 2 Cucumber
  • 1 small Red onion
  • 1 Red chili
  • 4 tablespoons White vinegar
  • 2 tablespoons Water
  • 1 teaspoon Salt
  • 1 teaspoon Erythritol
  • 1 inch piece Ginger

Directions

Step 1

Wash the cucumbers and peel them. Slice them in half lengthwise and scoop out the seeds with a spoon. Cut the cucumbers into thin slices.

Peel and cut the red onion into thin slices.

Step 3

Slice the red chili into thin rounds. If you prefer less heat, remove the seeds before slicing.

Step 4

Peel the ginger and cut it into thin matchstick-sized pieces.

In a large mixing bowl, combine the sliced cucumber, red onion, red chili, and ginger.
